I rather liked its understated elegance. You know, I was equally enamored of the gown Princess Angela of Liechtenstein wore in 2000 when she married Prince Maximilan. I think the Kinsky tiara she wore added just the right amount of bling.

Day Late and a Dollar Short

Despite the tardiness of the post, I'm in great hopes that you had a wonderful St. Patrick's day! As is my custom, I generally bake Irish soda bread in honor of the occasion.
This year I tried a different recipe and I'm sooo glad I did! It was, by far, the best soda bread I've ever had. I found the recipe HERE. I used 1-1/2 cups of currants instead of raisins and added 1/2 teaspoon of orange peel.

Troy University's Rosa Parks Museum

Troy University's Rosa Parks Museum, located at their Montgomery campus, made for such a nice family outing! The docents were very polite and the exhibits were interesting and informative. I'm so glad Beloved and Sugar Lumpkin are on vacation this week and that we were able to visit the museum. I was especially delighted to find the work of Ted Ellis, one of my favorite modern day artists, on display in the museum's Exhibition Hall. After a pleasant visit at the museum, we decided to lunch at Wintzel's. Their Creole and Cajun fare really hit the spot! For starters, my men started with fried green tomatoes topped in a crawfish sauce. After that came a pot pie of sorts. Beneath a flakey puff pastry shell, there was a blend of seafood, smoked sausages, okra, onions, tomatoes, etc. We enjoyed a rich bread pudding for dessert. The food was declared roundly delicious by all and the service was efficient and friendly. What more could we ask for?!

Hello dear reader (Mom!) I sincerely hope your weekend was all you hoped for.

My weekend included a visit to a local museum of fine art. There, Brooke and I watched an entertaining film which was followed by discussion and refreshments. The discussion, led by university faculty, became rather lively. Brooke and I really enjoyed the event... except the paltry refreshments. Yesterday found me and Tonia in a quaint little town for a day of antique shopping and such. Quite naturally, we had to stop in at the Rose Cottage. There, we enjoyed a pot of delicious African Autumn tea. We stayed and chatted so long that before we knew it, it was time for lunch! Luckily for us, the Rose Cottage is a great place to enjoy said meal. I ordered a delicous sandwich featuring chickpea salad. Tonia said her quiche was the best she's had. Anyway, after lunch we were off for more shopping! I won't go into detail about all the things I bought just in case Beloved decides to read this blog entry. You see, after 20 years of marriage, I've discovered that it's best to introduce my purchases to him bit by bit. All that shopping put us right in the mood for a nice treat. The ice cream creations at the old fashioned ice cream parlor exceeded our expecations! Yum! I didn't forget about Beloved and Sugar Lumpkin though. I brought them back a nice loaf of apple walnut bread... which I, of course, was obligated to sample. lol

Today I'm getting a few chores done, finishing off a homework assignment, and making a nice Sunday dinner for my men. Best wishes to you for a lovely week!

Oh... and my good intention of giving up all sweets this year for Lent = epic fail.

Crockpot Applesauce

I really wish I could remember where I found this recipe so that I could give proper credit. Sigh...

8 apples, peeled and chopped

3/4 cup brown sugar

1/2 cup water

1 teaspoon pumpking pie spice

1 teaspoon vanilla extract

Place all ingredients into your crockpot (I sprayed mine with non-stick cooking spray prior to adding the ingredients) and cook on low for 8 hours. Enjoy!

Notes: I used a variety of apples when I made it recently. I think I like the result much better than when I used a single variety. Also, I was out of pumpkin pie spice so I just used a cinnamon, nutmeg, and a wee bit of allspice. I also added 1 teaspoon of brandy. It was delicous!! Really, it puts store bought applesauce to shame.

Belove made Valentine's day quite special. There were cards, candy, flowers, and those delicious berries. We decided to have dinner at home because I'm really not into crowds lately. One of our favorite places is always exceedingly crowded on days such as Valentine's day anyway. We had such a lovely time at home. I hope your Valentine's day was lovely too.

Chocolat Chaud

I stumbled across a recipe for the BEST tasting hot chocoalate over on the Falling Off a High Heeled Life blog! Wow...great recipe and a great blog! What more could I ask for? Anyway, as soon as I saw that recipe I headed directly into the kitchen to give it a try. I'm so glad I did! This chocoalte is rich , thick, and delicious... kinda like a melted chocolate bar. It reminds me very much of the hot chocoalte I enjoyed in Paris. To view the original recipe please click HERE. My own modifications are listed below.

I used 1/2 cup of sugar. Also, I added a pinch of salt as it cooked and vanilla extract just before removing the mixture from heat.
I also served it with with copious amounts of freshly whipped cream. Divine!

Yesterday Beloved gave me a dozen of the most beautiful and fragrant roses! He also took me and Sugar Lumpkin to see the new Harry Potter movie. It was quite nice ... although I was disappointed to find a few things which differed from the book or were left out althogether. Anway, after the movie we went to our favorite Italian restaurant and

enjoyed great food and great conversation.

Today I cooked Beloved's favorite meal, which includes my homemade mac and cheese. Here's my recipe:

Alright, cook 2-1/2 cups of macaroni pasta for 8 minutes. Drain well. Beat 4 large eggs with 1 can of evaporated milk. Add salt and pepper to taste. Butter a baking pan or casserole dish. Layer the cooked pasta with the egg mixture and shredded cheddar cheese. Pour 1/4 cup of melted butter over the top. Bake at 375 degrees for about 22-25 minutes.

Notes: I use about 5 cups of cheese when I make this dish. That's right folks, this mac and cheese is cheesy! Also, I choose to grate my own cheese. I don't like pre-grated cheese... not sure why. Perhaps it's the anti-caking agents. Anyway, you can use either medium or sharp cheddar cheese. You can also add chopped green onions, chopped fresh basil, or red pepper flakes. You can even top it with buttered bread crumbs. Either way, it's cheesy and delicious... um... and obviously not for those on a diet.

Our tailgate for the 'big' game starts on Friday each year. I baked several batches of cupcakes and of course had to sample one (or two) before presenting them to our tailgate family. I also made a few tins of homemad peanut brittle! Talk about good! It's crispy, peanutty, and buttery... like good peanut brittle should be! lol Friday is also when we put the pig on to roast. I think it's totally disgusting but the men look forward to it every year. While the pigs roasts, everyone enjoys hot chili over rice served with cornbread muffins, fried fish, onion rings, french fries, slaw, etc. We go all night and into Saturday. Beloved and Sugar Lumpkin are out there living up right now (and no doubt eating copious amounts of chili.) I'm not feeling very well and decided to bring my patootie home.

Peanut Brittle

1 c. dry roasted peanuts
1 Tblsp. butter
1 c. sugar
1/2 c. light corn syrup
1/2 c. water
1 tsp. baking soda (NOT baking power)

Cover a pan in foil and spray lightly with non stick cooking spray. Set aside. In a large skillet, add the sugar, corn syrup, and water. Cook and stir until the mixture reaches the hard ball stage. Stir in the peanuts and butter. Continue cooking and stirring until gold brown. Remove from heat and stir in baking soda. Stir it well. Pour mixture onto prepared pan. While still somewhat warm, score the brittle with a sharp knife. When cool, break into pieces along the score lines. Enjoy!!!

Have you ever known (or know) someone who makes you feel richly blessed simply by being a part of your life? I feel that way about my best friend. She's the sister I never had. We quite often share our most intimate thoughts, without fear of judgement, despite the miles between us. I love her wit, intelligence, and ability to crack me up like no one else can. My biggest, indeed only, complaint about her is that she spoils me! She recently went to the Harry Potter theme park in Orlando. I was so thrilled that she went. It gave me such pleasure to know that she and her beautiful family were there, having a good time. Then, just yesterday a package arrived at my door. Look at what I found inside!

An Excuse and Pecan Pie

Geez! I've really been missing in action. The thing is, I'm not exactly sure why. I've kind of gone into my own little world as of late. Friends are starting to complain bitterly about unanswered calls and emails... and about my general rejection of all invitations. Bare with me my dear hearts! I shall, most likely, return to my bubbly sparkly self soon.

Anyway, I decided to bake a pecan pie for Beloved and Sugar Lumpkin last evening. Beloved says it's the best pie he's ever had.... in his whole life. lol. With a glowing review such as that, I thought I would share the recipe with you! Enjoy!

1/2 c. butter

1 c. white sugar

1 c. white corn syrup

4 large eggs, beaten

1 tsp. pure vanilla extract

1/4 tsp. salt

1 c. chopped pecans...PLUS pecans halves to decorate the top of your pie

1 egg white

1 (9-inch) unbaked pie crust

Preheat oven to 325 degrees. Brush your unbaked pie crust with the egg white and bake for 5 minutes. Remove from oven and set aside. In a pan combine the butter, sugar, and corn syrup. Cook the mixture over low heat, stirring constantly, until the sugar dissolves. Allow the mixture to cool completely. Add the beaten eggs, vanilla, and salt. Mix well. Stir in the chopped pecans then pour the filling into the pie crust. Decorate the top of your pie with pecans halves in any fashion you find appealing. Bake 50 - 55 minutes. Allow the pie to cool. Serve slices topped with whipped cream! Enjoy!!!

I Loved Every Minute of it!

Today I started aqua aerobics! It was fantastic!!! I've finally discovered an exercise that I can actually enjoy!!! It's an hour long class and it works every part of the body from the neck down! The best part is that it doesn't cause harsh impact or pain to my joints. The ladies attending the class were so supportive and fun. I'm already looking forward to the next class... which I confess is a first for me!

Daifuku

No, it's not an obscene word... It's a tasty treat!

I made daifuku yesterday and thought you might enjoy the recipe. It's one of my favorites.

1 c. mochiko

1/4 c. sugar

2/3 c. water

food coloring (I use just a few drops of red)

cornstarch

anko filling (canned or homemade if you're in the mood!)

Combine the first four ingredients together in a bowl. Stir until smooth. Cook over a low flame in medium pot until it is thickened and pliable (about 5 minutes.) Turn out onto a surface that has been sprinkled with cornstarch. Pat the mixture out with your hands. Be careful because the mixture is still hot at this point. Dust the top with cornstarch to make the job easier. Once flattened, cut into 8 equal sections. place about a teaspoon of anko in the center. Bring up the edges around the filling and pinch close. You should end up with circular sweets with a tasty filling inside.

Note: You can actually use a variety of fillings such as sweetened red bean paste, sweetened adzuki bean paste, fresh strawberries, etc. You can find both the mochiko and sweetened beans pastes in your local Asian market or in certain grocery stores.

Beloved, Sugar Lumpkin, and I had quite a busy day today. The morning started with me serving my men a breakfast of homemade mixed berry muffins and a fresh fruit platter with a fruit dip. We then attended the Build & Grow workshop at Lowes. Beloved and Sugar Lumpkin made a catapult! I really like the children's workshops offered by Home Depot and Lowes.

Anyway, after the workshop we immediately made our way to park for Sugar Lumpkin's baseball game. It was such a hot day (92 degrees!) The heat didn't seem to effect my men at all (I made sure we all kept well hydrated) but it sure took a toll on me! I hate heat like that! lol. After the game (which lasted for an eternity) we went home so that I could rest for few minutes.

Then we had the pleasure of joining Jason, Gina, Cameron, Daniel, and Audrey for coffee. It was such a delight to get together with them! Now, Beloved's in the back grilling jerk chicken. I have a pot of Jamaican rice and peas on. I'm making festival and a garden salad to go with the meal. Bill and Mary are joining us for dinner and a game of Scattergories. I bought some really ripe bananas to make tropical banana colodas which I'll whip up as soon as our guests arrive. They seem to be such favorite with our friends! Hope you are enjoying the weekend too!

They've already decided that the wedding is to take place in England, Roger's homeland. This all so exciting. You should see her ring! Tonight marks the end of the semester. I take my last final exam in just a few hours. I feel well prepared for it. Curried Wheatberry Salad

This is such a flavorful and scrumptiously delicious salad! Wheatberry salad was always one of my "must buy" items from the deli section at Whole Foods Market.... until I came across the following recipe:

1 c. wheatberries

1 gala apple, chopped

1/3 c. chopped bell pepper

1 small English cucumber, diced

1/3 c. whole almonds, roughly chopped and toasted

1/4 c. sweetened dried cranberries

1/4 c. raisins

3 Tblsp. extra virgin olive oil

6 tsp. apple cider vinegar

3 Tblsp. honey or agave nectar

1 TBLSP. curry powder

Soak your weatberries overnight in water. Drain. Bring them to a boil and boil vigorously for two minutes; simmer gently for an additional 30 minutes. Let cool. In large bowl combine the olive oil, vinegar, honey, and curry powder. Add the wheatberries, apple, cumber, almonds, raisins, and cranberries. Still well. That's it! Now enjoy your yummy salad!

Note: I'm partial to Olio Santo olive oil. It's quite simply the best olive oil I've personally come across and I use it faithfully for homemade salad dressings, dipping oils, etc. Also, I used a Jamaican curry powder. Feel free however to use whatever you happen to have on it. The salad will turn out wonderfully either way.

BBQ Chicken Pizza:

This is one of those recipes to use when you just don't want to spend a lot of time in the kitchen but still want to offer the family something homemade and delicous. It's quick (only about 10 minutes to whip up + 12-15 minutes in the oven = dinner in less than 30 minutes.) Best of all, it's dowright good!

1 Tblsp. yeast

1 c. warm water

1 tsp. sugar

1 tsp. salt

2 Tblsp. vegetable oil

2-1/2 c. all purpose flour

Preheat oven to 450 degrees. Dissolve the yeast in a large bowl with the warm water. Once dissolved, add the remaining ingredients. Knead the dough for 5 minutes. Roll the dough out on a floured surface. Transfer to an oiled pizza pan. Top the dough with 1/2 cup of your favorite BBQ sauce(I used Kraft Thick and Spicy honey.) Now add chicken (I use Perdue Short Cuts honey roasted chicken) and 1-1/2 cups of grated cheddar cheese. Bake 12 - 15 minutes. That's all there is to it! However, feel free to add additional toppings such as thinly sliced onions, bell pepper,etc. I typically serve the pizza along with a garden salad ...and gelato for dessert.

Yesterday I had the pleasure of attending the psychology conference. It was well attended by people from across the country. I was especially pleased at how well our team's study was received by such prestigeous people from within the behavioral sciences community. Dr. V #1 and Dr. V #2 were such a delight. Dr. V #1, pictured on the left, is my mentor. I feel very blessed to have her in my life. Dr. V #2 is just a hoot! She's so quick witted! Both ladies are a real joy. We were provided with delicious nibbles and yummies throughout the day. For breakfast, we had assorted muffins and various other pastries, artfully arranged fresh fruit platters, etc. Our lunch included hot dishes but I was interested in the sandwich station! It was stocked with white and wheat bread, croissants, hard rolls hoagie rolls, several cheeses, assorted meats, and all sorts of sandwich toppings (lettuces, tomatoes, etc.) Um... I also took particular interest in the dessert station. I wonder if anyone noticed my fondness for the brownies...

After the conference, I took a moment to quietly reflect on my blessings at the chapel. It's so peaceful there. All in all, it was a wonderful day.

Today Beloved, Sugar Lumpkin, and I enjoyed the pleasures and comforts of home. We slept in and lounged about. It was a rainy day so we played board games, baked and ate homemade brownies (I'm sure yesterday's event had something to do with my decision to bake them...) and watched movies. Another great day!

I made pumpkin pasties last evening using this recipe. Can you believe we finished them off before I was able to snap a photo? Beloved and Sugar Lumpkin loved them... and so did I! The ingredients may sound a little odd but the result was a delicious and delightful pumpkin pasty which really lived up to my expectations since reading the books.

Incidentally, I'm really looking forward to visiting Universal's Harry Potter theme park later this year. I'm saving up my galleons because I plan on going all out at Zonko's joke shop, Honeyduke's, and Ollivander's. I'm going to spend a considerable amount of time at the Three Broomsticks too!

A Walk in the Park

A Little Frugality Now... Opulent Luxury Later

The card games alone were $5.24 each

Today I purchased:

5 Softsoap Eensembles moisturizing hand soaps

My subtotal (without taxes and before coupons) came to $45.05. It would have been $48.65 with taxes. Anyway, after coupons, my subtotal (without taxes) was only $11.15!!! With tax, I paid a total of $14.75! That's a savings of $33.90!

I'll be using (some of) the money I've been saving lately for a nice long day at the spa... most likely 29 Spa located at the Mansion on Peachtree in Atlanta. The 'Right Off the Vine' massage is sheer bliss.

I managed to save $102 off groceries today (Which included an awesome vanilla cupcake lip balm and quite a few greeting cards.) It's amazing what planning and using coupons effectively can do for you! Let's just say, I've learned to speak the language of the deal!

A Great Day For Saving $$$

For just $13.97, I was able to purchase:

1 box Post Raisin Bran cereal
1 box Post Honey Bunches of Oats cereal
4 bottles of hazelnut Coffee Mate Creamer
3 cans Campbell's chicken noodle soup
1 can Campbell's tomato soup
1 Crest whitening toothpaste
2 packages (24 count each pkg) Stayfree Maxi super feminine items
1 package (16 count) extra long Stayfree Maxi feminine item
4 packages of Chex Mix
2 Dove candy bars
2 Laffy Taffy candies

I picked up the cereal at Winn-Dixie, where currently certain varieties of Post cereal are on sale for buy one get one free (BOGO) Additionally, I used a $2.00 of coupon I had for Post Raisin Bran (normally $3.99 per box.) So, my total for two boxes of cereal came to $2.31 with tax. I saved $5.99.At CVS, I picked up 4 cans of soup. They are on sale 2/$1. I also had a coupon for $1 off if I purchased 4...which I did. The coupon combined with the sale reduced each can of soup to .25 cents each! I also got the Crest toothpaste on sale for $1.99. I used a .75 cents off coupon and also received $1 extra care bucks for buying the toothpaste. This made the toothpaste really more like .24 cents! I then used the $1 extra care buck to buy Dove candy bars. They are normally $1.16 each but are on sale at 2 for .89 cents. I added two Laffy Taffy candies to bring my total up to .99 cents. The store waved the tax and I scored the candy for FREE.At Walgreen's, certain Stayfree products are on sale for $1.99 (normally $3.79 at my local store.) I had three $1 off coupons. That's three packages for only $2.97 before taxes! Chex Mix is on sale for .99 cents. I had two .50 off coupons and one 2/.50 off coupon. That reduced two of the packages to only .49 cents each. The other two packages came to $1.48 together. Also at Walgreen's, Coffee Mate creamer is $2.49 each but is currently on sale for BOGO. I had a $1.50 off coupon and a $1.oo off coupon. So, I scored a total of four bottles of the creamer for only $2. 48 before tax!!! They were out of French Vanilla creamer so I asked for a raincheck. So, once it comes in, I'll use my last $1 off coupon and score another two bottles of creamer for only $1.49.

If I keep going at this rate, I might just find myself vacationing in France again...sooner rather than later!

The Phunny Phorty Phellows got the Mardi Gras season off to a good start on January 6th (12th Night.) Since that date, I've been yearing for my dear New Orleans. General Tao's Tofu

I feel a wee bit sorry for my favorite Chinese eatery. You see, they've just lost a good customer now that I can make my favorite dish at home!

1 package extra firm tofu (NOT silken)

egg substitute for 1 egg

3/4 cup cornstarch

vegetable oil for frying

3 chopped green onions (or a bit of chopped yellow onion)

1 Tablespoon minced ginger

1 Tablespoon minced garlic

2/3 cup vegetable stock

2 Tablespoons soy sauce

4 Tablespoons sugar (yes, the amount is correct)

red pepper flakes to taste

1 Tablespoon white or apple cider vinegar

Drain, dry, and cut tofu into chunks. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer/water mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.Heat oil in pan and fry tofu pieces until golden. Drain on paper towel. Now, heat 3 Tablespoons vegetable oil in pan on medium-low heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons cold water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add the fried tofu to the pan and coat evenly with the sauce.

Notes: I put the cornstarch into a brown bag and shake the tofu pieces in the bag to coat. I cut my tofu into rectangular slabs instead of cubes. Serve the dish with rice. I like jasmine rice but use whatever you have on hand.

We received countless bottles of wine and champagne from friends this Christmas. We also received an abundance of homemade goodies and all sorts of other gifts!!! We feel so blessed to have such wonderful and loving people in our lives. It really is the friendships that mean the most to us. We wouldn't trade any of them for anything in the world! I truly hope your Christmas was filled with happiness, laughter, and the warmth of love and friendship too.
Um...this is the last of the stuffing (made from Emeril Lagasse's recipe...sans ground beef.) There was just enough of it left for Beloved to have a man sized portion along with the last of the turkey and giblet gravy. Perhaps we'll have to do two pans of it for next year's holiday season...

Yesterday I met with Brooke for coffee at our favorite meeting spot. It was fun catching up with her and looking at all the wonderful pictures from her recent travels. The photographs from Scotland, England, and France were simply beauitful.

Today Tanya and I spent a few hours doing a bit of last minute Christmas shopping. We had a blast, as usual.

In just a few minutes, Beloved is going to pop open a bottle of bubbly to go along with the caviar and creme fraiche on blini that we're having (well, actually Beloved's having the caviar...I'm indulging in a few other simple appetizers) while we watch a few holiday movies.

Yesterday, Tanya and I attended a wonderful Christmas program. I really enjoyed the various performances but confess that the creative rendition of the 12 Days of Christmas was by far my favorite. The evening ended with conversation, cake, and coffee.

Today I enjoyed a lovely afternoon with Gina. We went to see the famous Clydesdale horses! They were simply lovely and I'm glad I went, despite the freezing cold temperature. Afterwards, Gina and I had a rather late lunch and a nice chat.
By the time I made it home, Beloved had a roaring fire going, hot coffee, twinkling Christmas tree, and several movies that he and Sugar Lumpkin had rented awaiting my arrival. Life is so good.

Sugar Cookies

I baked several batches of sugar cookies today. I use the recipe from the Brown Bag cookie mold people. The recipe calls for 1 teaspoon of vanilla exctract. However, I find that 1/2 teaspoon of vanilla and 1/2 teaspoon of almond extract works wonderfully. The cookies are buttery and delicious. Beloved and Sugar Lumpkin look forward to them every year.

Antiques and Afternoon Tea with B.

B. and I spent hours visiting antique malls today...and despite the cold and rain, we had a blast! One of the shops offered complimentary gift wrapping, coffee, hot cider, and a variety of homemade cookies.

We found all sorts of things to ooh and ahh over. I was especially happy to find tiny sterling spoons for salt cellars. Following our hours of shopping, we enjoyed a lovely afternoon tea in the countryside. It really was an enjoyable day.

Santa wasn't feeling very well last night. I know because me, Beloved, Sugar Lumpkin, and Tanya and her family (along with several families from the community) spent time with Santa and Mrs. Claus down by the river. I don't want you to worry about dear old Santa though. You see, sugar plum fairies, nutcrackers, and merry little children all helped Santa get better! In fact, he felt better and better as the whole crowd shouted "Ho ho ho!" Within no time at all, Santa felt so good that he lit up the river with hundreds and hundreds of Christmas lights and even gave the elves permission to do a fireworks show! it was a wonderful night. Mrs. Claus provided us all with cups and cups of free hot chocolate. We sang all the old Christmas favorites and I had the opportunity to see friends and associates from all over town.

My father comes from a teeny tiny country in the Caribbean. There, people rely heavily on coconuts for all manner of things. The women use coconut oil to groom their hair and also to moisturize their skin. Coconut has a way of ending up in a variety of dishes. Even the rice is prepared with coconut milk. There is a delicious coconut candy there called tableta. It's one of my favorites. Another favorite is coconut bread, which is oftentimes served with flavorful stews. It's also eaten in the mornings along with a cup of strong coffee. There are several recipes for coconut bread on the internet. However, this is the recipe I use:

1 cup dessicated coconut

2 cups of unbleached flour

3/4 cup sugar

1/2 tsp. salt

3 tsp. baking powder

1 cup of whole milk

1 egg

1/2 tsp. pure vanilla extract

1/2 tsp. coconut extract

4 Tblsp. butter, melted

Lightly toast the coconut until it's light brown; set aside. In a large bowl, combine the flour, sugar, salt, and baking powder. Stir in the toasted coconut. In another bowl, combine the milk, egg, extracts, and melted butter. Add the milk mixture to the dry ingredients and mix well. Put batter into a bread panp. Bake 45 minutes in a preheated 350 degree oven.

I made homemade vanilla pudding this afternon using this recipe. I cooked it a bit longer than suggested because we like a firmer pudding. The result was delicious! If you like a more silky pudding, stop cooking as soon as it thickens and coats the back of the spoon.

There's a whirlwind of activity going on around here. I'm busy with cooking, cleaning, and decorating for tomorrow's big feast. Beloved and Sugar Lumpkin are helping. Beloved surprised me with some rather lovely and festive poinsettias. I just love the way they brighten up our home. Other decorations include a cute turkey that Sugar Lumpkin made from his handprint, pilgrim coloring pages, and placemats made from construction paper, waxed paper, and fall leaves. We've also decorated with gourds and indian corn. Anyway, here's a peek at our Thanksgiving menu:

I promptly turned right back around! I selected the Frosty the Snow Man, Santa Claus is Coming to Town, and Charlie Brown Christmas rolls of paper. At only a dollar each, I'm planning to go back again this weekend to stock up on more!

Operation: SURPRISE!!!

(As you can see, Tanya looks great without any makeup...but what was I thinking?! Oh well, at least I was comfortable in my favorite silk top and jeans!)

You should have seen the look on Tanya's face when she stepped through her kitchen door and found a house FULL of people all shouting SURPRISE! Her husband planned the whole thing. He took her out to an early dinner and a movie. That gave me, Elizabeth, Kim, and Theresa time to get everything in order. Tables and counters were filled with good food and drink.
Yum!

As always, Larry and Elizabeth make any gathering extra special. It truly was a special evening for an extra special lady. Happy Birthday Tanya!

I went through a few boxes today and found my old hip scarves and finger zils! The pink hip scarf with the silver coins was given to me a very long time ago by a friend from Egypt. I purchased th emerald green hip scarf about six years ago when I regularly took belly dancing lessons from Suzanne in Hawaii. Anyway, there's a new gym in my area that's offering belly dancing! Yippie!

After relocating to countryside here in the South, I had to be content with Shimmy on FitTv. Don't get me wrong though, I love that show!

Memories of Long Ago = Today's Breakfast

Year's ago, Beloved and I stayed at a truly wonderful place in Jamaica. Our ever whim was catered to and the amenities afforded to us were simply awesome. Our bedroom was located right on the water. We spent quiet mornings on our balcony breakfasting on Jamaican bun, cheese, and a platter laden with sliced tropical fruits. We drank Blue Mountain coffee and june plum juice. It was a magical place and we had to pleasure of being there for two weeks.We spent our afternoons doing all manner of things. At the beginning, we did touristy things like raft down the Martha Brea. This is Errol. We generally made a point of looking for him when we wanted a raft ride. The bottle I'm holding (although it's an alcohol bottle) actually contains "carrot drink." It's a mixture of fresh carrot juice, sweetened condensed milk, nutmeg, etc. It's delicous!Eventually, we ended up befriending a few of the locals. They were very kind to us. Below is a picture of Edward. He's the local who made us the carrot drink. I hope he and his family are doing well. Anyway, memories of that trip flooded my mind a few days ago. So, I surprised Beloved this morning by presenting him with Jamaican bun, cheese, fresh fruit, and june plum juice for his breakfast! He was delighted and we both enjoyed remembering that very special trip.

Thank You Jesus!

My main plan for yesterday involved sleeping in late, which is something exceedingly rare for me to do. However, around 8:30 a.m. I was aroused by a soft kiss on the lips. The kiss was immediately followed by these words, "I've made cinnamon rolls and coffee for you." As I accepted my breakfast, I looked at the warm rolls and coffee and looked at Beloved...and all I could think of was, "Thank you Jesus!"

Today I've been reorganizing bins in the shed, cleaning behind and under the stove and refrigerator, cleaning bathrooms, and polishing furniture. For this evening's dinner, I'm serving Creole Pasta (loaded with shrimp and crab,) green beans, corn, and salad. We're having a simple dish of store bought pralines and cream ice cream for dessert.

I rather like this historic house that's for sale.

The house next door is owned by the President and First Lady. I'm thinking that having them as neighbors might inspire me to do a better job of gardening. After all, I've heard the White House kitchen garden, started by the First Lady, is something really spectacular. Perhaps if I owned this house the First Lady and I would spend time swapping recipes and household tips, borrowing cups of sugar from one another, and hanging homemade country quilts out on the clothesline together. Perhaps Beloved would call out over the fence to invite the first family over for a cookout. Honestly, just the smell of Beloved's bbq has been known to bring neighbors out! Maybe Beloved might even get into an unspoken 'best lawn' rivalry with the President! You know, we once had a neighbor who intentionally waited until Beloved was at work to come over to ask me what secret he uses on the lawn to keep it looking so good (as if I would tell!) Anyway, after considering the price tag of this house , I'm reminded just how satisfied I am with the 'down home' neighbors I've been blessed with already. Be it ever so humble...there's no place like home!

My morning started with a nice brisk walk along with river with Chastity.

It was a perfect Autumn morning! After our walk, we decided to go for coffee and a bit of shoe shopping. When I arrived back home this afternoon, I did a number of chores about the house. Then I decided to treat myself to an 'at home' manicure. Honestly, I prefer doing my own nails nowadays. I'm never quite certain how sanitary the equipment is at nail salons. My friend Rose once got a nasty infection from a visit to a rather popular manicurist. No thank you!After my home manicure, I decided to have a nice cup of tea and a few Almond Thins as I read a bit of my newest book. Now, I have dinner in the oven. Beloved and Sugar Lumpkin should be home soon. I hope they enjoy tonight's meal (Italian sausage and three cheese stuffed pasta shells, garlic bread, salad, and fresh apple cake)

I completed several tasks today. Major grocery shopping was among them. It was a real delight to run into Gina at the market!

Beloved and Sugar Lumpkin wanted enchilladas for dinner this evening. I served them along with refried beans and Mexican style rice. They enjoyed the meal. I on the other hand have been craving a veggie burger since yesteray. So, that's what I had this evening and I have to say that it was quite good.

I've been invited to two Halloween parties tomorrow. They shoudl be a lot of fun. Darlene is such a creative hostess. I can just imagine what her decor and buffet table will be like! Luckily, the parties have been scheduled to start after trick-or-treaters have made their rounds. Speaking of trick-or-treaters, I purchased more candy this year than ever before in order to compensate for all the new homes that popped up in our subdivision. I would hate to have to turn anyone away empty handed. Anyway, may all your little ghost and goblins have a fun and safe Halloween!

What's inside the covered dish, you ask?

Why, it's a comforting and delicious ratatouille! See the steam rising from it? I served it hot with baked chicken, French bread, and white wine. Here's the recipe I use:

3 large zuchhini, sliced into rounds

1 large eggplant, cubed

2 fresh tomatoes, chopped (or a can of whole tomatoes, drained)

1 large bell pepper, green or red

1 onion, rough chopped

4 cloves garlic, sliced

Herbs and spices to taste (I use herbs de provence, basil, salt, and pepper)

Good quality olive oil

Preheat your oven to 425 degrees. Place all your prepared veggies in a large bowl. Season to taste with herbs and spices. Next, spray a baking dish with non -stick cooking spray. Add your veggies to the pan. Drizzle olive oil over the mixture. Bake for 20 minutes then stir. Bake an additional 25 minutes, stirring every 10 minutes. Remove pan from oven.
Stir and transfer to a serving dish. Enjoy with those you love!

I'm Downright Exhausted

Today found me baking homemade blueberry streusel muffins at 5a.m. After breakfast, I took Beloved and Sugar Lumpkin to work and school since we're having trouble with our other vehicle. I returned home only long enough to clean up the breakfast dishes, mop the kitchen floor, and fold a load of laundry....ok, I ate another muffin too.

Then, I had the pleasure of joining up with others for our annual community clean-up event! I look like I'm really working hard, huh?!I was very glad that my truck proved so useful! Gina, Ahsisa, and a few of the guys piled garbage bags filled with rubbish into the bed of the truck, which was then hauled to the dump site. Um...after seeing my driving first hand, I'm not too sure I'll get many people willing to be "runners" with me next year...It's rather unfortunate that they actually got to see me trying to drive in reverse...a laughable sight to say the least. Each year, over 100,000 pounds of trash gets cleaned up from the local river, creek, and all around the community during the event. This year, volunteers picked up glass and plastic bottles, paper, dirty diapers, discarded tires, etc. Even an old rusty stove had been dumped in a wooded area! Anyway, after leaving the community clean-up, I picked up a few needed items from the market, cleaned bathrooms, and then left out pick up Beloved and Sugar Lumpkin. I then made dinner (including a scrumdillyumptious blueberry cobbler...I'm on a blueberry kick for some reason.)Then I joined forces with Gina again this evening, along with a few other volunteers, in an effort to pack bags of groceries to be distributed to the homeless.I always enjoy Gina's company and this evening I was especially delighted because the kids came with her. They're such fun (and well mannered) children.The bags we packed contained a variety of items: Tuna, potted meats, soups, beans, pasta, rice, juice, canned veggies, brownie mix, cookie mix, etc. Frozen meats get added to the bags on the day of distribution. Beloved is preparing a nice bubble bath for me as I type. I really appreciate that because it's been a rather long day.

I've just finished baking a chocolate pudding cake using a recipe from TriniGourmet. I really enjoy the recipes there. Anyway, I was intending to wait until Beloved and Sugar Lumpkin made it home before "sampling" the aforementioned pudding cake...but well...it didn't quite work out that way.

I normally bake everything (such as cakes, muffins, cookies, pies, etc.) from scratch. However, when I saw these packages of muffin mix at my local market, I knew I just had to give them a try! To my way of thinking, any brand named Mayberry's Finest with a picture of Aunt Bea, Andy, and Opie just has to have something good inside. I used the peach cobbler muffin mix today. I kind of jazzied them up with the addition of homemade streusel topping (butter, flour, sugar, and cinnamon.) My men thought they were pretty good and Beloved actually thought they were totally homemade! If you decide you want to give them a try and your local market doesn't carry the mixes, just visit the company's website! After breakfasting with my men and sending them out on their day, I went for a delightful morning walk with Tanya. We really enjoyed all the neat Halloween decorations that have popped up throughout our subdivision. Don't you just love Halloween?! I get such pleasure out of visiting pumpkin patches and corn mazes, handing out candy, decorating, etc. By the way, be sure to stop by the Bone Garden Estate. It's an awesome Halloween website...my favorite in fact. Feel free to wander about the estate, visiting each of the rooms. You never know what you might find! Incidentally, when it comes to Halloween recipes Britta's website is a wonderful resource! She's so creative!

You've just got to head over to Twirl and Taste. Not only is it a beautiful blog (omg...the recipes! Why would she tempt us so?) but if you visit before October 31st, you get to wish Senator, a lovely lab, a happy birthday and get entered into a fab drawing for a French wine set!

Yesterday morning found me enjoying a coffee date with Heike. We chatted about all manner of things. I'm simply delighted that she's doing so well in real estate. I discovered that I was actually only two hours away from her family home when I spent a day in Frankfort, Germany this past June. Like most Germans I know, Heike loves coffee and cake. The only thing is, it doesn't show up on her! I can't even look at a cake without gaining a pound or two. Not fair!

Today I managed to gather a lot of clothes and what-nots to drop off at the local Goodwill. In return, they actually gave me a coupon for a free scoop of Ben & Jerry's ice cream! I certainly wasn't expecting anything in return so that really made my day. I also spent a portion of the afternoon readying the house for the colder months to come, including freshening my favorite heavy winter comforter, which smelled of moth balls. I also baked up a batch of pumpkin muffins. I really enjoy baking with pumpkin during this time of year. Beloved just loves my pumpkin scones. Maybe I'll get around to baking some next week. My favorite local spa has the most amazing chocolate truffle manicure and pedicure. Here's a direct quote from their brochure, "Hands and feet are cleansed and exfoliated with a chocolate milk bath wash and chocolate sugar scrub, treated with a hydrating organic chocolate truffle masque, and massaged with chocolate massage oil! Attention to calluses, cuticles are groomed, nails are shaped and painted. 90 minutes." The cost for the luxurious treatment is $85...quite a bit more than I'm willing to spend right about now. Not to worry though! I picked up a chocolate masque at the drug store yesterday for $1.34! Also, a sweet friend of mine works at a spa and provided me with the following recipe for making an "at home" salt glow for exfoliation and hydration:

1/2 c. almond or safflower oil

1 c. sea salt

1 Tblsp. unsweetened cocoa powder

mix and store in mason jar. That's all there is to it! Now that's what I call "Diva on a Dime!"

I'm really looking forward to opening night of Disney's Princess and The Frog. It opens in December. Don't you just love a good fairytale?! Best of all, this one's set in New Orleans! Recognize St. Louis Cathedral in the clip below?!

Any day now I'm expecting to be notified that the movie related bubble bath, shampoo, and conditioner are available for purchase. Quite a few little princesses in my family will find them in their Christmas stocking this year (...um...and yes, I plan on getting some for me too!)

I have lots of chores and errands to complete today, including picking up a jar of dry roasted peanuts at the market. When Sugar Lumpkin gets home from school, we're going to use those nuts to make peanut butter popcorn balls! The recipe is from an older issue of Taste of Home magazine. Incidentally, you can browse 25 digital issues of the magazine for free by clicking HERE. They're just filled with wonderful recipes.

With any luck, I'll complete most of my tasks by early afternoon, leaving me plenty of time for a little "at home" spa time! I'll use Chanel's Jade Rose nail polish for my manicure and pedicure. For my facial, I'm just using items from the Olay Definity line. Honestly, I like the products a lot more than many of the expensive skincare lines I've tried in the past.

Pecan Loaf: For Vegetarians and Non-Vegetarians Alike!

4 c. pecans (grind into meal using blender or food processor,) 2 c. chopped onions, 1/4 c. chopped celery, 1/4 c. chopped bell pepper, 1/3 c. water, 2 Tblsp. salt, 1 Tblsp. onion powder, 1 tsp. garlic powder, 4-1/2 c. tomato juice, 8 c. whole grain bread (made into bread crumbs,) 2 c. ketchup

In skillet, saute onions, celery, and bell pepper in the water. Add the veggies to the pecans in a large bowl. Add all remaining ingredients except the ketchup. Mix well and place mixture in an 8x8 inch pan (coated with non-stick cooking spray.) Bake for 350 degrees for 45 minutes. Cover the top with the ketchup and bake an additional 15 minutes.

I like serving the pecan loaf with mashed potatoes and gravy, English peas, and glazed carrots. It's what we had for dinner just last night...along with an apple pie for dessert.
